Energy Balls with Hemp Seeds and Chocolate

Ingredients (approx. 12 balls):
  • 1 dl hulled hemp seeds

  • 1 dl oats

  • 10–12 dates (pitted, soft – soak if dry)

  • 2 tbsp cocoa

  • 1 tbsp coconut oil (or nut butter, e.g. almond or peanut butter)

  • 1 tbsp chia seeds (optional, for extra binding)

  • 1 tsp vanilla powder or 1 ml vanilla sugar

  • A pinch of salt

  • 1–2 tbsp water or coffee (adjust for consistency)

Topping (optional):
  • Roll in hemp seeds, coconut flakes, cacao nibs or chopped nuts

Method:

  1. Blend the dates and coconut oil in a food processor until you have a sticky mass.

  2. Add the rest of the ingredients: hemp seeds, oats, cocoa, chia seeds, vanilla, salt and a little liquid. Blend until you have an even dough.

  3. If the dough is too crumbly – add a little more water or coffee.

  4. Shape into small balls with your hands.

  5. Roll in your chosen topping, if you like.

  6. Store in the fridge for up to a week, or in the freezer for a longer shelf life.
