Vegetable stir-fry is a quick and easy way to get plenty of fresh vegetables into your family's diet, and when you add hemp seeds the dish also takes on a nutty note, entirely without meat. The stir-fry can be served with rice or noodles and is an excellent way to use up leftover vegetables you have at home. Hemp seeds give the dish a lovely nuttiness and a slightly crisp bite.

Ingredients:

  • 1 onion, chopped
  • 2 garlic cloves, finely chopped
  • 4 dl mixed vegetables (broccoli, peppers, carrots, sugar snap peas)
  • 0.5 dl hemp seeds
  • 1 tbsp olive oil (for frying)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • Jasmine rice for serving

Instructions:

  1. Heat olive oil in a large frying pan or wok over medium-high heat.
  2. Fry the onion and garlic until softened.
  3. Add the mixed vegetables and fry for 5-7 minutes until tender but still crisp.
  4. Add the hemp seeds and fry for a further minute until lightly toasted.
  5. Mix the soy sauce, sesame oil and honey in a small bowl. Pour over the stir-fry and toss together.
  6. Serve the stir-fry hot with jasmine rice and, if desired, extra hemp seeds on top.
