Ingredients:
1 onion, chopped
2 garlic cloves, finely chopped
4 dl mixed vegetables (broccoli, peppers, carrots, sugar snap peas)
0.5 dl hemp seeds
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey
Jasmine rice for serving
Instructions:
Heat olive oil in a large frying pan or wok over medium-high heat.
Fry the onion and garlic until softened.
Add the mixed vegetables and fry for 5-7 minutes until tender but still crisp.
Add the hemp seeds and fry for a further minute until lightly toasted.
Mix the soy sauce, sesame oil and honey in a small bowl. Pour over the stir-fry and toss together.
Serve the stir-fry hot with jasmine rice and, if desired, extra hemp seeds on top.
