Ingredients (4 servings):
  • 1 dl hemp flour (or 2 tbsp finely ground hemp seeds)

  • 2 dl wheat flour (or any flour)

  • 4 dl plant-based milk (e.g. oat, soya or hemp milk)

  • 2 eggs

  • 1 tbsp oil or butter

  • 1 pinch salt

  • (optional) 1 tsp honey or maple syrup – for a sweet variant

Instructions:
  1. Whisk all the ingredients together into a smooth batter.

  2. Leave to stand for 10–15 minutes.

  3. Heat a frying pan with a little oil. Pour in about 1/2 dl of batter per crêpe.

  4. Fry for 1 minute on each side until golden brown.

  5. Stack and keep warm in the oven (100°C) if making a large batch.

Sweet:

  • Berries + plant-based yoghurt

  • Banana + peanut butter + cinnamon

  • Apple compote + cinnamon + walnuts

Savoury:

  • Spinach + garlic-fried mushrooms + oat crème fraîche

  • Grilled vegetables + hummus
