Hemp seed biscuits – small, crunchy biscuits with a nutty flavour from hulled hemp seeds. They are naturally gluten-free, can be made without sugar and are perfect as a snack or with your coffee break!
Ingredients (approx. 12 biscuits):1.5 dl rolled oats (gluten-free if preferred)
1 dl hulled hemp seeds
1 dl almond flour or coconut flour
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
A pinch of salt
2 tbsp coconut oil (melted) or a neutral oil
2 tbsp maple syrup, honey or agave syrup
1 mashed banana or 1 egg (for a non-vegan version)
1 tsp vanilla powder or vanilla sugar
(Optional: 1/2 dl dark chocolate, raisins or chopped nuts)
Instructions:Preheat the oven to 175°C and line a baking tray with baking parchment.
Mix all the dry ingredients in a bowl.
Add the mashed banana, coconut oil and sweetener – stir together into a sticky batter.
Spoon small biscuits onto the tray. Flatten them slightly.
Bake in the middle of the oven for approx. 12–15 minutes, until golden brown.
Leave to cool on the tray – they firm up as they cool.
Tips:
For a more “biscuity” texture – swap the banana for 1 tbsp chia seeds + 3 tbsp water (leave to swell).
Store in a tin for up to 5 days, or freeze!
