Hemp seed biscuits – small, crunchy and nutritious biscuits full of omega-3, protein and fibre from hulled hemp seeds. They are naturally gluten-free, can be made without sugar and are perfect as a snack or with coffee, with a clear conscience!
Ingredients (approx. 12 biscuits):1.5 dl oats (gluten-free if desired)
1 dl hulled hemp seeds
1 dl almond flour or coconut flour
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
A pinch of salt
2 tbsp coconut oil (melted) or neutral oil
2 tbsp maple syrup, honey or agave syrup
1 mashed banana or 1 egg (for a non-vegan version)
1 tsp vanilla powder or vanilla sugar
(Optional: 1/2 dl dark chocolate, raisins or chopped nuts)
Instructions:Set the oven to 175°C and line a baking tray with baking paper.
Mix all the dry ingredients in a bowl.
Add the mashed banana, coconut oil and sweetener – stir into a sticky batter.
Spoon small biscuits onto the tray. Flatten them slightly.
Bake in the middle of the oven for approx. 12–15 minutes, until golden brown.
Leave to cool on the tray – they will firm up as they cool.
Tips:
For a more "biscuity" texture – replace the banana with 1 tbsp chia seeds + 3 tbsp water (let it swell).
