Ingredients:
100 ml quinoa
200 ml chicken stock
300 g chicken fillet
200 ml mixed vegetables (broccoli, bell pepper, courgette)
50 ml hemp seeds
1 tbsp olive oil
Feta cheese and lemon wedges for serving
Instructions:
Cook the quinoa in the chicken stock according to the packet instructions.
Fry the chicken fillets in olive oil until cooked through, then cut into pieces.
Fry the vegetables until soft but still crisp.
Stir the hemp seeds into the quinoa and mix with the vegetables and chicken.
Serve with feta cheese and lemon wedges, and sprinkle over extra hemp seeds for added crunch.
