Ingredients (approx. 12 nuggets):
  • 150 ml cooked chickpeas (or white beans)

  • 50 ml hemp seeds (hulled)

  • 2 tbsp hemp protein powder (or hemp flour, optional)

  • 1 small carrot, grated

  • 2 tbsp cornflour or potato flour

  • 1 tsp onion powder

  • 1 tsp paprika powder

  • 0.5 tsp salt

  • 1 tbsp olive oil (plus extra for frying or brushing)

  • 1–2 tbsp water (adjust consistency)

  • Panko or sesame seeds for coating (optional)

Instructions:
  1. Blend the chickpeas, hemp seeds, grated carrot, oil and spices in a food processor.

  2. Add the hemp protein/flour, starch and a little water until you get a mouldable mixture.

  3. Shape into small nuggets with your hands. Coat in panko/sesame if you'd like a crispy surface.

  4. Fry in a little oil in a frying pan over medium heat until golden (approx. 3–4 min per side), or:

    • Oven: 200°C for 20–25 min (turn halfway through)

    • Air fryer: 180°C for approx. 15 min

Serving suggestion:

  • Dip in vegan aioli, hummus or mustard dressing
